Cooking Demo: Dietary Considerations for Patients with IgA Nephropathy
Background
In this webinar, Registered Dietitian Lauren Levy and Immunoglobulin A (IgA) Nephropathy (IgAN) patient and Kidney-Friendly Chef Anthony Valentine will share their combined expertise in IgAN and nutrition. They will start by providing an overview of IgAN, including Chef Anthony’s personal experience as a chef with IgAN. Anthony will then share a cooking demonstration of a delicious kidney-healthy recipe that can be enjoyed by patients with IgAN and their families alike. Registered Dietitian Lauren Levy will provide an overview of nutritional concepts—including macronutrients such as protein, and electrolytes such as sodium, potassium, and phosphorus—in IgAN, and provide dietary recommendations for patients with IgAN. She will also provide a nutritional analysis of Chef Anthony’s recipe.
Did You Know?
While researchers have not found evidence that diet and nutrition play a role in causing or preventing IgAN, there are still many diet-related steps that can help lower a patient’s risk of worsening CKD due to the disease, including limiting sodium intake and increasing plant-based protein in the diet1.

Renal DietitianLauren Budd Levy is a renal dietitian with 11 years of experience working with people with chronic kidney disease. Owner/Founder of Happy Health Nutrition andplant-based eater; Lauren believes kidney health is a lifestyle and not a diet. Kidney disease impacts all aspects of life and food choices are vitally important for kidney health. Making kidney-friendly changes can delay or prevent the progression of kidney disease.
Anthony Valentine
Kidney-Friendly Chef, Founder & Director of CukeBook.orgAnthony Valentine is the head chef and webmaster at Cukebook.org. Anthony graduated from the University of New Hampshire with a degree in Culinary Arts &in 2013. He was later diagnosed with IGA Nephropathy (IGAN) in April 2017. On January 31st, 2019, he received a new kidney from his mother. Post-transplant life will never be the same, and neither will his diet. So, combining his diagnosis of IGAN with his degree in culinary arts and nutrition, he created Cukebook.org. Cukebook is a website that documents recipes, guides, tools, and resources designed to help people fighting chronic kidney disease.
